On Nov. 18, 2014, Consumer Reports released an analysis of levels of naturally occurring arsenic found in rice and several other grains, leading the magazine to recommend curtailing people’s intake of rice and rice products.

However, the study follows a far more comprehensive analysis by the FDA, with levels of very low risk, which led the agency to recommend that people not change their diets.

So what’s a consumer to do? We spoke with Dr. Julie Jones, Distinguished Scholar and Professor Emeritus at St. Catherine University. She is an expert on both nutrition and food safety and helps put the issue into context. She also provides advice on what consumers can do: eat a well-balanced diet that follows the Dietary Guidelines for Americans.
